Dhigali Maldives is set to elevate its gastronomic offerings with an exclusive culinary collaboration featuring celebrated chef and restaurateur James Walters, the visionary behind London’s acclaimed Arabica. This February 2026, Chef Walters will bring his vibrant and contemporary interpretation of Middle Eastern cuisine to the heart of the Maldives, offering guests an unforgettable dining experience framed by Dhigali’s serene island atmosphere.
From 24–26 February 2026, Chef Walters will take over Battuta, Dhigali’s signature restaurant, for a three-night culinary journey. Guests will enjoy specially curated menus crafted and personally prepared by Walters, showcasing the flavours, stories, and creativity that have made Arabica one of London’s most beloved dining destinations.
Across each unique themed evening, Chef Walters will highlight his renowned approach to layering spices, balancing textures, and reimagining traditional dishes. The menus draw inspiration from the culinary heritage of Lebanon, Syria, Jordan, Turkey, and the wider Eastern Mediterranean-creating a seamless blend of authenticity, innovation, and island elegance.

Three-Night Menu Highlights
• Day 1 – Flavours of the Aegean
A sun-soaked menu inspired by Greece and Turkey, featuring vibrant small plates created for sharing and conversation.
• Day 2 – Levantine Feast
A celebration of the Eastern Mediterranean, presenting bold and aromatic dishes infused with Levantine spirit.
• Day 3 – Lebanese-Inspired Feast
An exploration of Lebanon’s rich, comforting, and deeply aromatic cuisine, designed for communal, family-style dining.
Dhigali Maldives’ General Manager, Christian Szabo, shared his enthusiasm for the collaboration:
“We’re thrilled to welcome James Walters to Dhigali. His food brings a sense of place, culture, and creativity that aligns perfectly with the experience we want our guests to enjoy. This collaboration will offer something truly memorable for anyone visiting the resort during this time.”
Chef James Walters added:
“Battuta is a beautiful space, and I’m excited to bring the flavours I love to Dhigali. Each menu is inspired by the vibrant, sun-soaked dishes of the Eastern Mediterranean. I want guests to feel the warmth, aromas, and stories behind every dish, and to share a sense of connection and celebration around the table.”
Set within Dhigali’s lush greenery and inspired by the journeys of Ibn Battuta, the restaurant offers the ideal setting for this immersive culinary experience. The collaboration promises to bring Arabica’s heritage to life in an entirely new setting-one- where bold Middle Eastern flavours meet the timeless beauty of the Maldives.
