“My cuisine is very straightforward. I like to enhance the ingredients, and over the years it has evolved to become more contemporary. Above all, I aim to create dishes that are always easy to digest, where technique plays an important role. This is my philosophy both in Italy and here in the Maldives.”

His approach reflects a clear balance between simplicity, technique, and respect for ingredients.

“I was inspired first and foremost by the place itself, especially the extraordinary H2O Underwater Restaurant. The opportunity to bring my cuisine to this island and enhance local ingredients was a great motivation. I am very happy to contribute to this magnificent place.”

The natural beauty of the Maldives and the uniqueness of underwater dining played a key role in shaping his culinary vision.


Blending Italian Craft With Maldivian Ingredients

One of the highlights of Chef Berton’s approach is his ability to merge Italian culinary tradition with local Maldivian ingredients.

“It was very easy to bring together ingredients from Italy and the Maldives. We created a dish combining lobster, papaya, and coconut—interpreted with an Italian spirit.”

“The first time guests arrive, they descend six metres underwater into a natural aquarium. They dine surrounded by marine life, watching fish move all around them. It is truly a unique experience, and my role is to enhance it through food, creating a complete sensory journey.”
